Roasted Mixed Vegetables

A delicious combination of spring vegetables that will compliment any meal.

2-3 zucchini, sliced into bite size pieces
1 onion, chopped into chunks
1 1/2 cups cherry or pear tomatoes
1 Tbsp. olive oil
1/2 tsp. kosher salt (or to taste)
pepper
Toss the vegetables in the olive oil, salt and pepper. Place on a foil covered roasting pan. Roast in a 400° oven for about 15 minutes, or until tender.
