Roasted Sweet Potato

Great as a side dish or healthy lunch. This is a non-sweet way to eat sweet potatoes during the holiday. Still a little sweet with the nutmeg.

2 medium size sweet potatoes
2 Tbs olive oil
2 tsp nutmeg
salt and pepper sprinkled over sweet potatoes
