Great as a side dish or healthy lunch. This is a non-sweet way to eat sweet potatoes during the holiday. Still a little sweet with the nutmeg.

2 medium size sweet potatoes
2 Tbs olive oil
2 tsp nutmeg
salt and pepper sprinkled over sweet potatoes

Preheat oven to 425.
Peel and slice sweet potatoes.
Make a tin foil dish by folding up the edges (so that oil does not leak out) and place on cookie sheet.
Toss sliced sweet potatoes in olive oil.
