Sweet Potato Casserole - roasted sweet potatoes, cashews, coconut, & marshmallows are smothered in a brown sugar, cinnamon, butter sauce!

4 pounds sweet potatoes, peeled and cubed into 1 inch chunks
1 (4.5 oz) can evaporated milk
½ cup brown sugar
¼ cup (1/2 stick) unsalted butter
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon salt, plus more to taste after roasting
¼ teaspoon black pepper
Topping:
1 cup roughly chopped roasted, salted cashews
½ cup sweetened shredded coconut
about 26 regular sized (large) marshmallows, more or less to taste
1 (4.5 oz) can evaporated milk
