Rocky Point Clam Chowder & Clam Cakes Copycat

No one can appreciate this recipe more than someone over 45 who grew up eating chowder and clam cakes at Rocky Point Amusement Park in Rhode Island. This recipe is adapted from the original Rocky Point recipe.

Chowder
1/2 pound salt pork
5 tablespoons butter
2 medium onions diced
32 ounces clam juice
32 ounces baby clams reserve juice
3 cans tomato bisque soup
1 can tomato soup
1 tablespoon oregano
1 tablespoon parsley
5 large potatoes diced
salt & pepper to taste
2 cups oyster crackers
Clam Cakes
1 can minced clams reserve juice
2 cups flour all purpose
2 teaspoons baking powder
1/4 cup onion chopped
1/2 teaspoon salt
1 cup milk
1/2 cup clam juice
2 large eggs
vegetable oil for frying
1/2 pound salt pork

Heat salt pork in a skillet until fat melts, add butter.
Add onions to saute.
In large stock pot, add 32 ounces clam juice, potatoes, soup, bacon & onion mixture.
