Because sometimes mashed potatoes just get a little boring. I love this alternative because it looks fancy, tastes delicious and takes less time to prepare. Sometimes I get tired of my old recipe so they get tossed, but this one has stuck around for at least ten years and it ain't going any where any time soon. That's how you know it's a winner

5-6 small red potatoes
4 Tbs butter
1/3 cup shredded parmesan
1 Tbs chopped fresh rosemary
1 tsp dried basil
salt and pepper, to taste

Wash, but don’t peel potatoes. Cut into cubes and boil until tender. Drain then return to pan. Gently mix in butter, parmesan and seasonings then serve warm.
