Rustic Ratatouille

In honor of one of my favorite Disney movies I decided to try and recreate the infamous dish Ratatouille. Now being that this is a French dish I was prepared for the recipe to be very complicated with a lot of steps and special ingredients. To my surprise I was wrong. Ratatouille is one of the simplest and tastiest dishes ever. I think prep time took me a total of 15 minutes and that's including making the veggie swirl design.

1 cup of marinara sauce
2 tablespoons of garlic oil - or olive oil
1 long Italian eggplant - sliced thin
1 green zucchini - sliced thin
1 yellow squash - sliced thin
1 red pepper - sliced thin
Dash of thyme
