Salad with Grilled Veggies

3 Tbsp. olive oil
2 bell peppers (pick your favorite colors)
4 ears of corn, shucked
2 zucchini (green or yellow)
1 head of red leaf lettuce, cleaned and chopped
Your favorite dressing
Lightly brush bell peppers and zucchini with olive oil (corn does not need oil) Grill all veggies on the barbecue until starting to brown, flip once Allow veggies to cool to room temperature Cut the grilled veggies to bite sized pieces Prepare plate with lettuce and top the green with the grilled veggies and your favorite dressing You can use any veggies you want. This is also an excellent meal topped with slices of grilled chicken or lean grilled steak.
