Salted Caramel & Pecan Mini Cheesecakes

Velvety smooth cinnamon-infused cheesecakes covered in a generous layer of gooey salted caramel and sprinkled with toasted pecans

1-1/4 C graham crumbs
1/4 C unsalted butter

12 oz regular cream cheese (not light)
1/2 C light brown sugar, packed
1/2 tsp vanilla extract
1/4 C heavy cream
1/4 tsp salt
1/2 tsp cinnamon
1 large egg

1/2 C pecans, chopped & toasted
20 baking caramels (I use Kraft baking caramels)
2 TBS heavy cream
1/2 tsp sea salt
