For the Vanilla Cupcakes:
•1/2 cup butter, softened
•3/4 cup granulated sugar
•1 egg
•2 egg yolks
•1 vanilla bean, seeds removed or 1 tablespoon vanilla paste, or 1 teaspoon vanilla extract
•1 1/2 cups all-purpose flour
•1 1/2 teaspoons baking powder
•1/4 teaspoon salt
•1/2 teaspoon vanilla extract
•1/2 cup whipping cream
For the Chocolate Ganache Topping:
•1 cup semi sweet chocolate chips
•1/4 cup heavy cream
For the Coconut Topping:
•3 cups shredded coconut (about 1-14-ounce bag)
•12-ounces chewy caramels
•3 tablespoons milk
For the Chocolate Drizzle:
•1/2 cup dark chocolate chips
•1/2 cup butter, softened
