Sausage Stew

This is a version of a PA Dutch sausage stew. My mother made it and now I'm making it. It's a soup that if you cook it a couple of hours, it's better. My hubby could just drink the flavorful broth.

? soup potful of water
4 stalks of celery chopped
1 med. to large onion, chopped
6 large potatoes diced, not too small
2 lb. smoked sausage sliced and halved
2 to 3 carrots sliced
3 T parsely flakes
salt and pepper to taste
Fill pot ? to ½ full of water and put all ingredients into the pot. Bring to boil and turn down to simmer 2 to 3 hours. I cut my sausage slices in half to get sausage in every bite.
