Artichoke Pie has to be one of my favorite comfort foods growing up. Coming from an Italian family where every meal was no less than 4 courses this would normally be served as a side dish. Fortunately artichoke pie is one of those dishes that you can enjoy any time of the day. It's simply artichokes, eggs, cheese, and some herbs in a pie crust. 1 tablespoon olive oil
8.5 oz can of artichoke hearts
1 teaspoon of garlic - minced
5 large eggs - beaten
16 oz mozzarella - grated
1/2 cup of Parmesan cheese - grated
1 tablespoon of fresh parsley - chopped
1 store bought pie crust - defrosted
