Season’s Choice Salad

During Christmas feasts, don’t forget to serve an appetizer with fresh vegetables for our health! Basically this salad can be made up by any vegetables and dressings that go well together. Here we choose the most common seasonal ingredients in the winter and all the year round.

8 oz. lattice
4 oz. sweet pepper
4 oz. shrimps
1/2 oz. croutons
3 T. Ranch salad dressing
2 tsp. lime juice
1/2 tsp. salt

Wash and devine the shrimps. Add the salt into boiling water, and blanch the shrimps in it, until the meat turns opaque. Take out the shrimps and cool in cold water. Drain.
Wash and drain the vegetables. Cut the lattice into 1”~2” pieces, and the sweet pepper into 1/2”~1”pieces.
Mix the lime juice with the shrimps and vegetables. (The lime juice can remove the fishy smell of the shrimp, as well as prevent the shrimp and vegetables from being oxidized and changing colors.) Then add the Ranch salad dressing and mix again. Spread the croutons on top of the salad.
