Semolina Idli

Steamed south indian savory cake... this recipe is used in fiji islands to make idli. I hope you will like it to.

Ingredients
2 cup semolina
1/2 teaspoon baking powder
2 tablespoon yogurt plain
1 cup water
1 teaspoon salt
1 tablespoon oil
1/2teaspoon mustard seeds

Method
1. Roast the semolina in a pan. Set aside to cool. Now get another pan heat the oil and add mustard seeds. You can add onions if you prefer for extra taste its optional.
2. Once the semolina is cooled add oil mixture, baking powder, yogurt and salt.
3. Mix until it becomes thick. Dont worry if it is thin mixture. Now add little by little water until it becomes thin and no lumps are left. This mixture should be able to coat the back of a spoon.
4. Now pour the mixture into the idli maker and cook. If you dont have a idli cook use reminkens in a pot with water make sure no steam escapes from the pot.
5. Cook for 15 to 20 mins or until the idli is nice and soft. Take out the idli and sever hot with chutney or sambar. I like mine cut half way and filled with coconut chutney. Enjoy
