Shakshouka is a popular middle eastern dish, made with lots of eggs. It is usually served as breakfast but honestly i love to eat it in lunch or dinner too. There are lots of different versions of this dish here i am posting my own version of this very simple dish also known as "khageena" in asian countries.

4 eggs
3 tbsp oil
1 small onion, chopped
2 chopped tomatoes
1 teaspoon red chilli flakes
a pinch of turmeric powder
salt to taste
1/4th cup, chopped fresh coriander leaves
2 chopped green chillies
bread or naan to serve with

Whisk eggs in a bowl and keep them aside.
Heat oil in a pan, add chopped onion and fry for few minutes. When onion start changing it's colour add chopped tomatoes, red chilli flakes, turmeric powder and salt. cook for 10 minutes till all the water from the tomatoes dry up. Add whisked eggs, keep stirring with the spoon till the eggs are fully cooked and scrambled. Add coriander and green chillies. Mix properly, turn the flame off. Serve hot with bread or naan.
