Sharon's Squash Casserole

Summer squash are a family favorite vegetable, both the yellow and zucchini varieties. This dish is hearty, with lots of flavor and cheese.

2-3 lbs squash, cut into slices or pieces
2 tbsp butter
2 cups shredded cheese
1/4 tsp salt
1/4 tsp pepper
Bread crumbs
2 tbsp butter
2 cups shredded cheese
1/4 tsp salt
1/4 tsp pepper
Bread crumbs
Clean the squash and cut off tops, then cut into pieces. Boil until almost done (about 10 minutes), then remove from heat and drain completely. Pour the cooked squash into a casserole dish and combine with butter, cheese, salt, and pepper. Top with bread crumbs and bake at 350 until bubbly and golden brown.
