3 1/2 lbs boneless pork shoulder or butt*
1 tsp salt
1/2 tsp pepper
2 tsp chili powder
1 tsp ground cumin
1 tsp dried oregano
1/4 tsp cinnamon
1 onion, chopped
4 cloves garlic, minced
4 tomatoes, chopped
1 cup chicken broth
For the Grilled Pineapple Salsa
1/4 of a pineapple, peeled, cored and sliced 1/4 inch thick
1/4 red onion, diced
1/2 of a jalapeño, seeds and veins removed, diced
juice and from half a lime
2 Tbsp chopped fresh cilantro
salt to taste
Chunky Guacamole
2 avocados, peeled, seeded, and mashed
salt, to taste
lemon juice, to taste
