Shrimp and Avocado Pasta Salad

This Shrimp and Avocado Pasta Salad is simple, healthy, and incredibly delicious. Our entire family enjoyed it for two nights in a row!

1 lb. cooked ( peeled shrimp )
8 ounces short pasta (I used penne, but rotini, bowtie, etc. would also work), cooked and drained
1 pint cherry or grape tomatoes ( sliced in half )
2 tablespoons minced fresh chives
1 yellow bell pepper ( chopped )
½ cup fresh or frozen corn kernels
1 avocado ( sliced )
Red or green leaf lettuce ( for serving )
For the dressing:
3 tablespoons fresh lemon juice
3 tablespoons vinegar
1 tablespoon finely chopped fresh parsley
1 tablespoon Dijon mustard
1 teaspoon honey
¼ teaspoon salt
Pepper ( to taste )
