Shrimp With Lobster Sauce

A real easy Asian favorite!

2 lbs large shrimp, shelled and deveined
1 tbsp. vegetable oil
1 tbsp chopped fresh ginger
3 cloves of garlic, chopped
1 cup frozen peas and carrots, thawed
1 cup chicken broth
1-2 tbsp. soy sauce
1 lightly beaten egg white
1 tbsp. cornstarch
3 tbsp. water
1 scallion (green onion) sliced for garnish
