Everyone loves bacon. It's full of flavor and there's so much you can do with it. It's also a good source of protein. You can add some fresh vegetables such as spinach and broccoli to add more nutritional value to the dish. Capers and olives would be nice too. You can also add a bit of cream to the dish. For a French twist, add a bit of nutmeg or tarragon.
