Simple Pancakes

Simple, low sugar pancakes are a perfect hot breakfast for any day of the week.

1 cup all purpose flour
1 tablespoon sugar
1 1/4 teaspoon baking powder
1 egg
2/3 cup milk
2 tablespoon olive oil
Dash of salt

Heat griddle to 375 degrees or pan on medium heat. In a bowl whisk all ingredients together until smooth. When the griddle is hot drop 1/4 cup portions of batter. This should make a small pancake. Once the pancake begins to bubble and the edges look firm flip it. Let the other side cook for 2 minutes or so. Serve hot.
Will keep in the fridge for 5 days.
If you would like to freeze the pancakes be sure to separate with wax paper and freeze in an airtight container. When you are ready to eat. Cover with a wet paper towel and microwave 45 seconds to 1 minute.
