Flatten out biscuits
Place 1 tsp. pizza sauce (optional), a slice of Mozzarella cheese and your favorite pizza toppings on one flattened biscuit, while still allowing a bit of dough around the edges for sealing.
Top with another flattened biscuit and gently seal the edges by pressing them together.
Place in a heated sandwich maker and cook until golden brown
Serve with pizza sauce (pour on top or dip).
If you don't have a sandwich maker, try leaving the pizza sauce out and cooking it with a waffle iron.
One tube of biscuit dough is usually 8 biscuits, which will yield 4 pockets.
