Single Serving Leftover Mash Potato Shepherd's Pies are the perfect way to use up your Thanksgiving or Christmas leftover mash potatoes! Using individual ramekins allows you to serve the perfect portion to your family or friends. This recipe is easy to make so it's perfect any day of the week!

1 lb Ground Beef
1 White Onion ( diced )
3 garlic cloves ( diced )
1 jalapeno ( deseeded and diced )
2 carrots ( peeled and diced )
2 celery ( diced )
1 cup peas
2 tablespoons Siracha
to taste salt and pepper
1 teaspoon dried thyme
1 1/2 tablespoons flour
1/2 cup chicken stock
1/3 cup cheddar cheese per ramekin ( shredded )
3-4 cups leftover mashed potatoes
  1. Preheat your oven to 400 degrees.
