Six Banana Banana Bread

This bread is extremely moist, delicious, and full of banana flavor! This recipe makes one 8x4 loaf and 8 standard sized muffins. After I started pulling out the ingredients for this I realized I had no eggs. However, my lack of foresight led me to using a flax egg instead, and the bread turned out incredible! This bread is super moist and dense, but still maintains a fluffy crumb. It is by far the best banana bread I've ever made, and it is one of the best quickbreads I've ever made!

6 tbsp warm water
2 tbsp ground flax meal
2 ½ cups all-purpose flour
¼ cup white sugar
2 tbsp cornstarch
2 tsp baking soda
½ tsp salt
1 tsp cinnamon
6 tbsp unsalted butter, melted
¾ cup white sugar
¼ cup brown sugar
2 tsp vanilla extract
¼ cup plain non-fat Greek yogurt
6 bananas, mashed (about 2 ½ cups)
½ cup walnut pieces
2 tbsp ground flax meal
2 ½ cups all-purpose flour

Preheat the oven to 350?F and grease and flour an 8x4 bread pan and 8 muffin cups.
