Skinny Vegetable Minestrone Soup

This is a quick and delicious soup. Perfect for a chilly night in the winter months.

2 Tbsp. olive oil
1 large onion, diced
2 zucchini, diced
2 yellow squash, diced
3 carrots, diced
3 celery stalks, diced
4 cloves garlic, minced
5-6 cups chicken or vegetable stock
1 TBS. dried oregano
1 ½ tsp. dried thyme
1/2 tsp. black pepper
1/4 tsp. red pepper flakes
3 bay leaves
2 (28 oz) can reduced sodium diced tomatoes, with juices
2 (15 oz) cans beans, rinsed and drained
4 cups chopped fresh baby spinach or kale
1/2 cup dried pasta
salt and pepper
freshly-grated Parmesan
