Slow Cooked Beer Beef!

New favorite we have this EVERY month now! I use Budweiser for this but any beer will do!

1 whole Chuck Roast, 2 1/2 To 5 Pounds
Salt And Pepper To Taste (Be Generous!)
3 Tablespoons Olive Oil
1 whole Onion, Peeled And Sliced Thick (or if you really want thin I'd do 2 onions)
3 cloves Garlic, Chopped
2 cans Beer (feel free to add one more depending on size of pot to mostly cover the meat)
1 teaspoon Ground Thyme
1/2 teaspoon Rosemary Leaves
