Slow Cooked Cuban Pork – Lechon Asado

Slow cooked Cuban pork, in Spanish known as Lechon Asado, is usually roasted over hot coals or in a high heat oven. But sometimes, when the craving hits and time is of the essence, I reach to my crock pot to satisfy the flavors of my Cuban heritage. Pork shoulder, size depending on your crock pot

1 small/medium onion

Lots of garlic, crushed (I used 6-8 cloves for this, but have been known to use upwards of 20, depending on size of pork)

Orange juice concentrate, 2-3 scoops

1 lime, juiced

2-3 tablespoons Mizkan Champagne Vinegar

Cumin, to taste (This spice is crucial for the flavor of the lechon. Don’t go crazy, but don’t skimp on it either)

Salt/pepper, to taste
Throw the ingredients into your crock pot, making sure that the everything is well incorporated. Cook on high for 4 hours, or low on eight. Serve with arroz y frijoles negros, Cuban Black Beans.
