Slow Cooker BBQ Pulled Pork

A quick and easy slow cooker meal of BBQ pulled pork.

3-1/2 lb (1.75 kg) pork shoulder roast
canola oil/olive oil for pan
2 onions, chopped
5 cloves garlic, crushed
2 Tbsp. chili powder
3 bay leaves
¼ cup tomato paste
1 – 14 oz can tomato sauce (try to use low sodium)
2 Tbsp. each packed brown sugar
2 Tbsp. cider vinegar
2 Tbsp. Worcestershire sauce
Whole wheat buns for serving

Sprinkle both sides of pork with salt and pepper. In a large skillet, heat a small amount of oil over medium-high heat and brown pork on all sides (takes about 8-10 minutes). Transfer to the slow cooker. ...
