Slow Cooker Mushroom Quinoa

Have you tried quinoa? Slow Cooker Mushroom Quinoa would be a great way to try it (or if you already know how much you like quinoa this is a great way to enjoy it in a new way!). I love the fact that quinoa is such a complete food. It has protein, it has fiber, and it’s just good for you. I also like taking a break from the rice side dishes (don’t get me wrong I love myself some rice – it’s just nice to have a change of pace).
2 C uncooked quinoa
4 C broth (I used chicken, but to make this a vegetarian meal - use a veggie broth)
1 package dry onion soup mix
2 6.5 oz cans sliced mushrooms, drained
2 15 oz cans whole peeled straw mushrooms (in the asian foods section)
1 chopped sweet onion
1-2 tsp salt

Combine all ingredients into your slow cooker
Stir gently
Cook on low for 6 - 6.5 hours until quinoa is fully cooked (liquid should all be absorbed)
