Slow Cooker Pot Roast

Winter is the time of year when the temperatures dip into the 30's or 40's and you crave some yummy soups, stews and other comfort foods. It's when I bust out my slow cooker a lot more often then during the summer months. If you love to cook like I do, the slow cooker is an essential kitchen appliance. It is one of my favorites in my "toy cupboard." This recipe is easy to make. Drop it all in the slow cooker and relax! It does all the work for you.

1 - 2.5 pound rib roast
4 medium to large red potatoes
4 large carrots, peeled
half of a medium red onion
4 cloves of garlic
1 packet of Crock Pot Savory Pot Roast Seasoning

Season the roast first with some course sea salt on both sides and then slice two of the garlic cloves. Cut little slits into the roast and inserted the garlic slices into the slits. My mom used to do that...
