Smoky Split Pea Soup

Smoky split pea soup with onions, carrots, celery and rosemary is made even more decadent with tofu bacon. The ultimate in healthy comfort food.

6-8 servings
1 medium onion diced
3 medium carrots diced
3 celery stalks diced
2 cloves garlic
1 Tbsp. Rosemary
2 cups green split peas
8 cups vegetable broth ( or use water )
8 oz block firm tofu
1 cup soy sauce or Tamari
1 Tbsp. Maple syrup
1 Tbsp. liquid smoke
2 tsp. apple cider vinegar
1/2 tsp garlic powder
1/2 tsp. garlic powder
1/2 tsp. black pepper

For the soup:

Prepare the onion, carrots and celery.

Add the vegetables to a large soup pot and place the vegetables, rosemary and ½ tsp salt.
