Chicken Fried Steak:
4 cube steak ( 1/3 lb each )
1 1/2 cups all purpose flour
2 tsp. ground black pepper ( fresh, divided )
2 tsp. kosher or sea salt ( divided )
1/2 tsp. paprika ( smoked )
1/2 tsp. onion ( powder )
1/2 tsp. garlic ( powder )
1/2 tsp. baking powder
1/2 tsp. baking soda
1 1/2 cups buttermilk
2 tsp tabasco sauce
2 eggs
1 cup vegetable oil
Gravy:
4 tbsp. grease
4 tbsp. flour
3 cups whole milk
1/2 whipping cream
salt ( to taste )
pepper ( to taste )
