Delicious whole grain side dish that is so versatile that you can pretty much do anything with it. Since I love mexican, tex-mex and anything spicy, I doctored this to suit my love of southwest flavors

2 tbsp extra-virgin olive oil
1 clove garlic, minced
1 tsp paprika
1 cup quinoa
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp salt
1/2 tsp pepper
1 pinch cayenne pepper (more if you like it extra spicy)
1/2 medium red onion, chopped
2 roma tomatoes, diced
1/2 sweet red pepper, diced
2 cups cooked or canned black beans, drained and rinsed
1 cup corn kernels
