Southwestern (Mostly) Egg White Scramble

Tell me this has happened to you please! It was the day after Thanksgiving and my Grandmother was staying with us for a few days. We were celebrating the holiday at my mother’s home in NYC with the family. It just so happens that I had a bit of time to sneak to the market for breakfast the next day while everyone was hanging out watching Football. 6 egg whites + 2 yolks
1 tablespoon butter (Oil is fine as well; I like butter for scrambling eggs and since we are mainly using egg whites I’m OK with it.)
1/4 cup shredded reduced-fat Monterrey jack cheese
1/4 cup shredded mozzarella
1/2 teaspoon chili sauce (Sriracha is a nice choice)
1 red bell pepper chopped
1/2 yellow or purple onion chopped
Pinch of Salt and Ground Pepper
