Spaghetti Pomodoro: The Umami Version

When this classic dish is prepared the right way there is nothing more satisfying - in this version we add a few roasted Roma tomatoes for added texture and depth of flavor.

4-5 roma tomatoes, halved
10 garlic cloves, peeled and smashed
small handful of fresh thyme sprigs
kosher salt
extra virgin olive oil
1 28 oz can whole peeled San Marzano tomatoes
fresh basil
1/2 lb spaghetti
1 tablespoon butter
parmigiano reggiano cheese
