Spaghetti Squash with Homemade Marinara

A healthy alternative to traditional spaghetti
1 medium-large spaghetti squash
1 Tbsp. olive oil
1/4 cup onion, diced small
1 tsp. minced garlic
2 cans petite diced tomatoes
1 small can tomato sauce (use Rotel sauce for spicier marinara)
1 Tbsp. dried basil
1. Tbsp. dried parsley
1 tsp. dried oregano
1 tsp. salt
1 Tbsp. olive oil
1/4 cup onion, diced small
1 tsp. minced garlic
2 cans petite diced tomatoes
1 small can tomato sauce (use Rotel sauce for spicier marinara)
1 Tbsp. dried basil
1. Tbsp. dried parsley
1 tsp. dried oregano
1 tsp. salt
1. In a medium sauce pan, add olive oil and sauté onions and garlic together until onion is soft.
2. Add tomatoes, tomato sauce, basil, parsley, oregano & salt. Stir together and simmer on medium/low heat for 30 minutes, stirring occasionally.
3. While sauce is simmering, prepare the spaghetti squash by piercing with knife (to allow for steam to vent). Place in microwave and cook for 5-10 minutes or until soft.
4. Remove from microwave (be careful, it will be very hot) and cut in half length wise. Remove seeds. With a fork scrape the inside to remove the "spaghetti". Serve with marinara.
