4 cups Fresh Mint Leaves, chopped roughly
4 cups Lemon Juice
4 cups Sugar
1 cup Fresh Ginger, peeled and chopped roughly
Soda Water or Sparkling Water, to top up

1.) Place the Mint, Juice, Sugar and Ginger in a large saucepan - bring to the boil, making sure all the Sugar has dissolved, and lower heat - simmer for 10 minutes.
2.) Remove from the heat and let cool...
