Spiced Cabbage and Carrot Pickle (Achard)

Vegetable achard is a popular dish in Mauritius. I grew up eating this dish. It’s used as a condiment on dishes. I love it served on rice and a fried egg on the side. There are different ways to cook your vegetables first, my mother used to Blanche the vegetables first and leave to air dry for around 4 hours. I cook the vegetables raw with the onions and all of the spices together. This version is child friendly so no chilli is used. My son loves this with bread and butter as a snack.

Ingredients (to fill a 950ml jar)
½ cabbage finely shredded
4 carrots grated
1 large onion diced
2 tbsp. garlic and ginger paste
2 tsp mustard seeds
1 tsp cumin seeds
1 tsp turmeric powder
2 tbsp. vegetable oil
1 tbsp. white wine vinegar
Salt to taste
