Spicey root vegetable roasted in the oven to perfection! Quick and easy side to any meal!

1 Cup diced Sweet Potato
1 Cup diced Red Potatoes
1 Cup dice Carrots
McCormicks Montreal Steak Seasoning
Thin coat of Extra Virgin Olive Oil (about 2-3 Tbsp)
1/4 cup Parmesan

Preheat ove to 425 degrees. Chop all veggies into small cubes. The size will depend on how fast it cooks. For quick cooking add all chopped veggies to cold water and bring to a boil. Cook until a fork can barely break through. Drain water and toss veggies in the olive oil, parmesan, and seasoning. On a greased cookie sheet, spread out the veggies evenly. Bake in the over for about 20 minutes or until you can see them crispy up.
