spicy Cajun mustard chicken

chicken tenders are the prefect finger food, and this recipes adds a Cajun kick to the classic mustard chicken.

18 oz. Of chicken breast cut in to strips (12 tenders)
½ teaspoon of Italian seasonings
2 tablespoon Cajun seasonings
3 cups of bread crumbs
1 tablespoon of Texas Pete (optional)
2 eggs (beaten)
¼ cups of yellow mustard
Salt and pepper (to taste)
½ teaspoon minced garlic
½ teaspoon minced onion flakes
Vegetable oil for frying
Step 1: place chicken in a large bowl, add the mustard, minced garlic and onion flakes mix well and let marinate in the fridge for 15-20 minutes Step 2: pre-Heat vegetable oil in a large sauce pan of deep fat fryer for 10- 15 minutes over med-high heat. Step 3: beat 2 eggs in a bowl and add Texas Pete (optional) Step 4: prepare bread crumbs in a medium bowl add Italian seasonings and Cajun seasonings to the bowl and mix well Step 5: pull the chicken out of the fridge and place the tenders one at a time in to the egg mixture and in to the breadcrumbs Step 6: add the breaded tenders to the oil slowly and cook for 3-5 minutes or until golden brown and repeat until all the chicken is cooked.
