Spicy Sausage Lasagna

What I love the most about this Lasagna is that it's made with sausage instead of the usual ground beef. The sausage gives it loads more flavor. You don't have to use spicy sausage, just whatever you prefer. It's a family favorite, easy to make and always a hit!

Meat filling
1 lb. Italian sausage (spicy, medium or mild)
1 clove garlic
1 T. basil
1 1 /2 tsp. salt
1 32 oz. can diced or crushed tomatoes
2 6 oz. cans tomato paste
10 oz. box of lasagna noodles
Cottage cheese filling
2 eggs
3 c. cottage cheese
1/2 c. grated parmesan cheese
2 T. parsley flakes
1 tsp. salt
1/2 tsp. pepper
1 lb. mozzarella cheese
1 lb. Italian sausage (spicy, medium or mild)

Cottage cheese filling
2 eggs
3 c. cottage cheese

1 lb. mozzarella cheese
Brown meat slowly; spoon off excess fat. Add next 5 ingredients. Simmer uncovered for 30 minutes stirring occasionally. Cook noodles in a large pot of salted boiling water until tender. In a bowl, beat eggs; add remaining ingredients except mozzarella cheese. Layer half the noodles in your baking dish; spread with half the cottage cheese filling; add half the mozzarella cheese and then half the meat sauce. Repeat. Bake at 375 for about 30 minutes (or assemble early and refrigerate; bake 45 minutes). Let stand for 10 minutes before serving. Serves 8-10
