SPINACH AND ARTICHOKE LASAGNA ROLL UPS

This would be the perfect weekend dish to try at home. This version of lasagna roll up is reminiscent of my all time favorite spinach and artichoke dip. What’s better, it’s in lasagna form. #winning

12 lasagna noodles
1 tsp salt
2 cups ricotta cheese
1 large egg
2 cloves of garlic, minced
10 oz frozen spinach, thawed and drained
1/4 cup Parmesan cheese
1/4 tsp dried basil
1/8 tsp red pepper flakes
pinch of nutmeg
salt and pepper to taste
2 cups shredded mozzarella cheese
4 cups marinara sauce
1 cup artichoke hearts, chopped
