Spinach Avocado Salad

Fresh and healthy pasta salad with spinach, avocados, tomato, chickpeas and cilantro with a sweet lemon dressing.

For the salad
2 1/2 cups mini penne noodles (or other bite size pasta)
2 cups spinach
1/2 of a bunch of cilantro
1/4 cups onion, finely diced
2 garlic cloves, minced
2 avocados, peeled, seeded and diced
1 can chickpeas, drained and rinsed
1 cup cherry tomatoes, cut in half
For the Dressing
Juice of lemon
2 tsp olive oil
1 tsp sugar
2 tsp Dijon mustard
1/2 tsp cumin
Salt and pepper, to taste
