Spinach Cilantro Avocado Pasta Salad

This salad is so healthy and the perfect way to get your family to eat their "greens" in a delicious way! You get your protein from the beans, grains from the pasta, healthy fats from the avocados, and veggies from the spinach, onion and tomatoes. Then top it off with a light lemon dressing and you have the perfect blend of yummy flavors!

For the salad:
2 1/2 cups bowtie pasta
2 cups spinach
1 bunch cilantro
1/4 cups onion, finely diced
2 garlic cloves, finely chopped
2 avocados, diced
1 can navy beans or chickpeas, drained and rinsed
1 cup cherry tomatoes, cut in half

For the Dressing:
Juice of 1 medium lemon
2 tsp olive oil
1 tsp sugar or agave
2 tsp Dijon mustard
1/2 tsp cumin
Salt and pepper, to taste
