I'm always having a hard time getting the kids (and the husband) to eat veggies, so I make this yummy meatloaf, and sneak in a healthy dose of spinach, They think they are eating meat and I know they are getting some great nutrients. Its a win-win for everyone!

1 pound Ground Pork
1 pound Ground Beef
1 small yellow onion
1 small yellow pepper
2 Cups Spinach
2 table spoons Honey
1/4 teaspoon garlic salt
1/4 teaspoon black pepper
2 eggs
1 cup Ketchup
1 cup oatmeal
1 pound Ground Beef

1 cup oatmeal
Mix all the ingredients into a large bowl, mix well. Spread into an 11x14 inch pan and bake at 450 degrees for an hour to an hour and a half (depending on your stove).
