Spinach pie

Phyllo layered with spinach.

2.5 lbs of fresh spinach ( chopped)
1/2 cup olive oil
2 bunches green onions ( diced)
1/2 cup parsley (chopped)
1/2 cup fresh dill ( chopped)
1/4 tsp ground nutmeg
Salt and pepper to taste
Zest of 1 lemon
3 large onions ( diced)
1 cup feta cheese
4 eggs beaten
1 cup ricotta cheese
1/4 cup butter
1/4 cup olive oil
1 lb phyllo sheets
1/3 cup pine nuts
Heat 1/2 cup olive oil in large skillet,sauté onions and green onions until translucent. Add spinach,parsley and dill. Cook 5-7 min until spinach has wilted down .Add salt ,pepper,nutmeg and lemon zest.Remove from heat and set aside. In a large mixing bowl combine feta ,eggs,ricotta,pine nuts and spinach mixture. Combine olive oil and butter. Using a pastry brush,brush 2 9x12 pans. Working quickly so phyllo sheets do not dry out,Layer 10 sheets in the bottom of each pan. Making sure to Brush each sheet with butter/ oil mixture. Add half the spinach mixture. Layer another 10 sheets ,brushing with the oil mix. On each sheet again. Repeat with the second sheet pan. Bake at 350 for approx 23-30 min. The tops will be golden and flakey. Serve with Greek salad.
