Spinach Salad with a Tangy Dressing

A tangy and healthy dressing covers this delicious pasta + spinach salad. Simple and under 15 minutes from start to finish

1 cup penne pasta (measured dry)
1 boneless skinless chicken breast (plus olive oil, salt, pepper, and seasoning)
10 ounces baby spinach
1 and 1/2 cups grape tomatoes, halved
3/4 cup crumbled feta cheese
1/4 cup slivered almonds, toasted
Dressing
1 teaspoon clementine zest
2 tablespoons juice from a clementine
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 tablespoon honey
1 tablespoon Dijon mustard (do not use regular)
1/2 teaspoon salt
1/4 teaspoon pepper
