Switching the sugar for SPLENDA in these cupcakes with lemon cream cheese frosting makes for a delicious, lower calorie treat.

For the cupcakes

16g SPLENDA granulated
125g low fat spread
125g self-raising flour
¾tsp bicarbonate of soda
75g skimmed milk powder
2 eggs, separated
4 tbsp water
12 cupcake cases

For the cream cheese topping

300g reduced fat soft cheese
Juice and finely grated zest of 1 lemon
2 tbsp SPLENDA granulated
