Garlic is inserted into this tasty roast beef before braising with thyme and vegetables. A perfect #SundaySupper

2 pounds chuck roast
6 cloves garlic, peeled
1 teaspoon extra virgin olive oil
2 tablespoons fresh thyme
1 teaspoon salt
1/2 teaspoon black pepper
3 cups potatoes, peeled and cubed
2 cups baby carrots, chopped
1 whole onion, peeled and quartered
4 cups fat free beef broth
6 cloves garlic, peeled
1 teaspoon extra virgin olive oil
2 tablespoons fresh thyme
1 teaspoon salt
1/2 teaspoon black pepper
3 cups potatoes, peeled and cubed
2 cups baby carrots, chopped
1 whole onion, peeled and quartered
4 cups fat free beef broth
Preheat oven to 350.
Cut 3 cloves of garlic into slivers. Make slits in the roast and insert the slivered garlic into the roast. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
