Steak Salad with Roasted Acorn Squash

Grilled flank steak tossed with spicy arugula and crispy baked acorn squash. It is then topped with maple roasted chili pepitas and a orange and chili vinaigrette.

1 lb. flank Steak
Dry Rub for Steak:
2 tsp. chili powder
¼ tsp. salt
¼ tsp. pepper
Baked Squash:
1 Acorn Squash
1 Tbsp Olive oil
salt and pepper
Maple Roasted Pepitas:
¼ c. Pepitas (or pumpkin seeds)
1 Tbsp. Maple Syrup
1 tsp. chili powder

Salad:
4 c. mixed greens
Dressing:
? c. Fresh Orange juice (I used about 2 oranges, will depend on how big yours are though)
¼ c. apple cider Vinegar
¼ c. Olive oil
1 Tsp. chili powder
1 clove garlic, minced
a few dashed of hot sauce (depends on how spicy you like it)
salt to taste
