Stickin' My Neck Bone Out Red Beans and Rice

This is a super thick version of the popular traditional Monday bowl of red beans and rice that's served in New Orleans.

1 lbs dried red beans
1 lbs smoked sausage, sliced to 1/4-inch circles
1 1/2 lbs smoked pork neck bone
2 tbsp bacon fat
2 yellow onions, diced
1 green bell pepper, diced
3 stalks of celery, diced
1 tbsp of minced garlic
4-5 bay leaves
2 tsp dried thyme
1 tsp dried parsley
1 tsp dried oregano
1/2 tsp cayenne pepper
1/4 tsp black pepper
1/4 tsp white pepper
6 cups water
1 cup cooked white rice
green onions, chopped, for garnish
